This isn't a Crunchy Cookie but nice and soft like Banana Bread.
I make this often. They make good snacks. I also add some caramel topping since it tastes great with the banana. It's soft like a bread, but made the same way I make all the cookies.

Ingredients
125 Grams Butter Softened
1/2 Cup Sugar or Caster Sugar
1/2 Cup Brown Sugar
1 Egg
2 Bananas (roughly 230 Grams)
2 Tablespoons Caramel Topping
1 1/2 Cups Self-Raising Flour
Directions
Heat the butter in the microwave for 15 seconds to soften it.
Put the softened butter, brown sugar and sugar in a mixing bowl.
Mix for a minute, or until fully combined.
Add an egg.
Mix for a minute, or until fully incorporated.
Slice the banana.
Add flour, caramel topping and banana to your mixture.
Mix for a minute, or until combined.
Oil your tray or line it with baking paper.
Preheat your oven to 180 degrees Celsius. Each cookie should weigh about 30g. Use a spoon to make a coin shape, using the back of your finger to get all the mixture off your spoon. Place the cookie dough on the tray, leaving enough space for it to expand.
Put in the oven for 10 minutes or until slightly browned.
Once baked, let it cool for a minute before transferring into a cooling rack.
Let them rest to cool.
