Home made supreme pizza pockets.
One of my favourite snacks. They keep in the freezer and you can heat them up in the microwave. I love making these. I first made one working in an Italian restaurant where we made pizza and pastas. With left over dough, we tried new things and these pizza pockets were great.
A great snack pizza in a pocket
They are kind of mini calzones, great to make and great to eat. These are my supreme pizza pockets, but you can put anything you like in these with some cheese.

Makes about 12 Serves
Ingredients
300 Grams Shredded Pizza Cheese or Shredded Mexican Cheese
100 Grams Cabanossi
100 Grams Kransky (Kranjska Klobasa or Carniolan sausage)
100 Grams Pepperoni
40 Grams Green Capsicum (Green Bell Peppers)
40 Grams Red Capsicum (Red Bell Peppers)
50 Grams Cup (Button) Mushrooms
80 Grams Spanish Onion
40 Grams Olives

Dough
290 Millilitres Warm Water
1 Teaspoon Sugar
2 Tablespoons olive oil
1/2 Teaspoon salt
2 1/2 Teaspoons Dried Yeast
480 Grams Plain Flour
Directions
In a bowl, add your dough ingredients. Mix through and then kneed. add more flour if needed. If you have a bread maker, add your dough ingredients, then use the pizza dough setting.
Once you kneed it, make it into a ball and put cling wrap loosely over the top. Let it rest for 20 minutes.
While your dough rests, slice the kransky (kranjska klobasa or carniolan sausage), cabanossi and pepperoni thinly. Slice the pepperoni in half. Set them aside.
Thinly dice your onion. Dice your capsicum (bell peppers) and thinly slice your mushrooms. Keep your olives whole.
In a bowl, add your cheese, nap sauce, vegetables and meats. Mix well.
Roll the dough into 60 grams balls and keep aside.
Roll out a Ball Thinly with a Rolling Pin.
Place in enough ingredients so there is still space around the edges.
With your hands, fold the dough up into a ball shape and squish in so there are no gaps to the filling.
Mould into a ball shape. Sit aside. Repeat the process until they are all done.
Spray your tray with oil or use baking paper and cook for about 30-40 minutes until the pockets go brown.
Once cooked, you can eat them fresh. You can let Cool and reheat them later. You can also freeze them for a snack. Enjoy!
