Makes 28 wing bits
Ingredients
14 Chicken Wings about 1500 grams
1 Teaspoon Salt
2 Teaspoons Cracked Pepper
150 Grams Rice Flour
Raunchy Ranch Dressing
Directions
Here's a pic of how to cut the joints. Feel the middle on the joint with your knife having the wing open and tip facing up, then cut on an angle.
To cut the two wing bits, have them both facing up and your knife at an angle between the joints, and it should slice between them and not into the bone.
You can see the angles I cut them on. It may take practice, but is fairly simple.
Add the rice flour, salt and pepper in a bowl then mix evenly through.
Add 7 wing bits and coat them. You can add less or more depending how big your deep fryer or pan is.
Make sure they are all coated with your rice flour mixture.
make sure all your chicken is under the oil.
Cook your wing bits until nice and brown and cooked through. You may need to cook them in batches.
To check if they are cooked, grab a drum bit and cut it down along the bone and meaty part. There should be clear juice and no uncooked blood. If there is, put them back in the oil and check another one after a few minutes.
Once cooked, let them drain for a minute, then add them to a bowl. You can freeze the wings if you made too much or want to save some.
Serve on a plate with your ranch dressing. Enjoy.
