Oven baked chicken breast stuffed with pancetta, cheese, and tomato.

ree

One of my secret recipes - delicious and easy to make. You can use ham, bacon, or even prosciutto instead of the pancetta.

Great chicken dish for the family or date night.

Makes a splendid meal paired with vegetables, fries, wedges, or a salad. This is a restaurant style chicken. It may sound or look fancy, but this dish is very simple.

Ingredients

Makes 2 servings

2 chicken breasts (~200 grams per breast)

1 tomato (enough for 6 slices, 3 each breast)

50 grams diced pancetta (or slices of prosciutto, ham or bacon)

70 grams Jarlsberg cheese

40 grams butter

Vegetable oil spray

100 grams grated mozzarella (I use an Italian blend but grated Tasty cheese or colby also work)

Salt

Black pepper

Smoked paprika

Rub

5 grams fresh sage, roughly chopped (half if dried)

5 grams fresh oregano, roughly chopped (half if dried)

1 teaspoon salt

1 teaspoon cracked pepper

1/3 cup olive oil

Directions

ree

Thinly slice the Jarlsberg Cheese. You want about 3 slices per breast

ree

Cut the tomato into six slices. You may want more or less depending on the size of your chicken breast.

ree

Roughly chop the herbs.

ree

Combine the rub ingredients into a bowl and mix.

ree

Slice the butter into thin squares.

ree

The diced pancetta I used.

ree

Prepare the chicken breasts for butterflying.

ree

Use your knife to slowly slice long ways across the middle until almost the end, then open it up and cut further if needed.

ree

Use a meat tenderizer on the butterflied chicken breasts.

ree

Prepare all of your ingredients.

ree

Add the paprika seasoning and a small amount of the herb rub.

ree

Add the butter.

ree

Place the tomato slices, spread over half of each chicken breast.

ree

Cover the tomato with the Jarlsberg cheese slices.

ree

Add the diced pancetta on top of the cheese.

ree

Fold over the chicken breast to cover everything

ree

Cut deep slits into the top of the chicken breast but be sure not to cut through them.

ree

Brush the chicken breast with the rest of the herb mix.

ree

Spray the baking tray with oil or rub a small amount of oil onto the tray with a paper towel.

ree

Place the chicken breasts on the tray and spread them out if you can.

ree

Bake the breasts for 15-20 minutes at 180℃. You don't want to overcook the chicken, so be sure to check it after 10 minutes.

ree

After the chicken has cooked all the through, add the grated cheese on top and cook for another ten minutes.

ree

Bake until the cheese is fully melted and browned to your liking.

ree

Plate your finished baked chicken breast!

ree

Pair with some fries, vegetables, or side of your choice. Enjoy!
