Curried eggs are one of chefs' most favourite sandwiches.
This is a stable in my home. I grew up eating curried egg sandwiches and still eat them regularly today. Very simple to make and makes a great lunch.

For curried eggs or any boiled egg sandwich, you want to cook your eggs until the yolk is hard.

Makes 4 Serves
Ingredients
4 Eggs
Mayonnaise to Taste
1 Tablespoon Curry Powder
30 Grams Butter or Margarine
4 Handfuls of Iceberg Lettuce, Thinly Sliced
8 Slices Bread
Margarine or Butter to Spread
Directions
This is the curry powder I use.
Put your eggs and water in a pot. Cook on high heat.
Once boiled, turn down the heat to medium-low. Simmer for ten minutes.
Peel and add your eggs in a bowl.
Add 30 grams butter. Mash your eggs and butter until combined.
Add your curry powder and incorporate it into the egg and butter.
Butter your bread.
Add your lettuce to the bottom slice.
Add the egg mix on top of the lettuce.
Add mayoniase to taste.
Top it off with the other slice of bread and enjoy!
