Bacon and Egg Sandwich

Inspired by one of my favorite shows - Red Dwarf.



In the Season 2 episode “Thanks For All the Memories,” Lister creates a similar sandwich for Rimmer to try. As the drunk Rimmer describes it: "He feels like he's having a baby and it's incredible... all the ingredients are wrong... but put them together and somehow it works..." I created my own take on Lister’s iconic sandwich with my favorite chili sauce and chutney, bacon, and lettuce.


Great food when you're drunk or hungover.

You don't have to be drunk for this sandwich - it's enjoyable sober as well and really easy to make. The chutney and hot sauce adds an extra element, making it more than your ordinary bacon and egg sandwich. I use white bread in my recipe. I think it adds more simplicity and believe it or not, helps make this sandwich better.


Recipe


Makes 1 Serving


Ingredients


Shit The Bed Hot Sauce (or your Favorite Hot Sauce), to taste

Fruit Chutney, to taste

1 Handful Lettuce (optional)

1 Slice Cheese (optional, I prefer sliced processed cheese)

2 Eggs

2 Rashers Bacon (Bacon Slices)

3 Slices White Bread

50 Grams Butter (for cooking)

Butter or Margarine (for spreading on the bread)


Directions

Chop the bacon in halves


Melt the butter in a pan on medium heat.


Add the bacon to the pan.


While the bacon is cooking, butter the bread slices.


My preferred brands of fruit chutney and hot sauce.



Spread the chutney and hot sauce on the bottom of the middle layer slice and the bottom of the top layer.


Cook the bacon until it begins to brown, then move it to the side of the pan.


Crack the two eggs into the pan, cooking them to your liking.


Flip the eggs and continue to cook them to your preferred doneness. I only flip mine for 30 seconds as I like the yolk a little runny.


Begin creating your sandwich by stacking a fried egg and then bacon on the bottom slice, adding the middle slice and repeating, and then topping it off with the top slice of bread.
