Chefs go to roast chicken recipe.
a stuffing might sound hard and overwhelming to make but it is fairly simple. If you don't want to or unable to make a stuff you can place a whole lemon and some herbs inside the chicken.
This is great accompanied with vegetables and gravy.
this is my easy go to roast chicken recipe. It's a hit every time and so simple to make. You wont be disappointed cooking your chicken this way. I use dry or fresh herbs, depending on what I have at hand.
Recipe
makes 1 1.50-2kg chicken
Ingredients
1.5-2kg Chicken
1 Teaspoon Rosemary
1 Teaspoon Thyme
1 Teaspoon Sage
1 or 2 Lemon Sliced into 12 pieces
Butter or Margarine for Greasing
Oil or Lard (Enough for Cooking)
Stuffing
1/4 Cup Milk
1 Teaspoon Sage
1 Teaspoon Rosemary
1 Teaspoon Thyme
1 Egg
150 Grams Bread Crumbs
1 Zest of a Lemon
1/2 Large Onion Diced
50 Grams Butter Melted
Directions
In a bowl, add all the stuffing ingredients.
With your hands, mix through combining everything.
Slice the lemon into 12 slices. In a bowl, add your Rosemary, Thyme, Sage.
Roll out enough aluminium foil to cover the chicken. With a brush over the foil with butter or margarine. Add six lemon slices and sprinkle half your herb mix.
With your hand make the stuffing into big clumps. this makes it easier to stuff the chicken.
Stuff the chicken with the stuffing as tight as you can. Use a toothpick to cover the hole with the skin.
Sprinkle the to and sides of the chicken with the rest of your herb mix.
Add lemons on top.
Fold your foil over the chicken
Push down the sides.
Push up the sides making sure its wrapped tight.
Pre heat your oven on 180 degrees Celsius. Melt your lard or heat up your oil.
Add your chicken and cook for 1 hour and 30 minutes.
Open your chicken. Cook for another 20 minutes. Until it goes brown.
Once cook its ready to serve. Enjoy!
