Chefs BBBB Stir-Fry

Beef, broccolini and black beans can't go wrong for a stir-fry.



Traditionally beef and broccoli or beef and back bean I combined them both. Serving it on a bed of crispy noodles.


A great tasting stir-fry

The secret to getting tender meat in stir-fry's is using baking powder and corn flour, then massaging the marinade in. I believe it gets into the molecules of the meat and helps it become tender.


Recipe


Makes 2 Serves


Ingredients


500 Grams of Beef

4-6 Broccolini ( Broccoli is ok)

3 Bok Choy, Cut in Quarters or Half

3 Pak Choy, Cut in Quarters or Half

150 Grams Snow Peas, Cut Tops and Tail and Destringed

4 Cloves Garlic, Roughly Diced

Crispy Hokkin Noodles

Sesame Seeds for Garnish


Marinade


1 Tablespoon Regular Soy Sauce

1 Tablespoon Chinese Shaoxing Wine

1/2 Teaspoon Baking Powder

3 Teaspoons Corn Flour (Corn Starch)


Stir-fry sauce


2 Tablespoon Chinese Salted Dried Black Beans (Soy Beans)

1/4 Cup Oyster Sauce

2 Tablespoons Chinese Shaoxing Wine

1 Tablespoon Light Soy Sauce

1 Teaspoon Dark Soy Sauce

3 Teaspoon Sugar

1 Teaspoon Ground Black Pepper

1 Tablespoon Corn Flour


Directions


Cut the off the ends. Take off the string on top of the snow pea. Cut in in half diagonally.


Cut all of your snow peas. Set aside.


Chop off the stork part at the bottom, cut the stem just below the leaves (like the picture). Keep the stem and leaves. Set aside.


Cut the stem just below the leaves. Cut the leaves in half (like the picture). Use the leaves only. Set aside.


For your broccolini cut half the stem off. Keep the top part only. Set aside.


Cut the top of the garlic, with your knife crush it.

Peel off the skin. Dice into thick chunks.


Put your dried black beans in a sieve (strainer) and run them under cold water for a minute.


Roughly chop your black beans. Set aside.


Cut off any fat.

Slice your beef thinly on an angle.


In a bowl add your beef and marinade ingredients. With your hand massage the ingredients together. Set aside for 30 minutes to 2 hours.


In a bowl, add your sauce ingredients. Stir to combine. Set aside.


Have all your ingredients ready to add to the wok.


Heat up your wok and oil on medium-high heat.


Add your beef and stir occasionally. Cook until the beef has almost cooked through, roughly 2 minutes.


Once your beef has cooked like the picture, take it out the wok and set it aside in a sieve (strainer).


Leave the oil in the wok after removing the beef. Add a touch more oil if needed.


Add your garlic and cook for roughly 30 seconds.


Add your snow peas and broccolini and toss through. Cook for roughly 2 minutes. Stirring occasionally.


Add your beef back in to the wok and cook for roughly 2 minutes. Stirring occasionally.


Add the pak choy and bok choy. Toss through until the leaves have wilted.


Add your sauce toss and simmer until the sauce has thickened.


Add the crispy noodles on your plate, then add the stir-fry. Add sesame seeds for garnish. Enjoy!
