Chefs Fantastic Fry Up

My take on a fry up - a hearty medley of vegetables and meat.


Easy and flexible, it’s fantastic for a quick weeknight dinner. You can use any meat you like but I found it best with lamb or steak.

Try my fry up recipe. Not an English fry up breakfast, but here we call fry up basically a bunch of vegetables and meat fried up together in a pan.


Everyone loves a good fry up.

Pair it with some bread, rice, or mashed potatoes, or even some pasta or noodles for a filling meal. It’s still great the next day as well, just freeze your leftovers and enjoy them later!


Recipe


Makes 3-4 servings


500 grams lamb or steak

2 Rashers bacon (Bacon Slices)

2 large shallots

3 tomatoes, cut into 6 pieces

1 Small Yellow Bell Pepper (Red or Green are okay), sliced into strips

1 Medium Zucchini, thinly sliced

6 Medium Button or 2 Medium Flat Mushrooms (brown is okay), thinly sliced

50 Grams Butter

1/2 Tablespoon Olive Oil

Sesame Seeds for Garnish (optional)


Sauce


1/2 Tablespoon Hickory Liquid Smoke

2 Tablespoon Worcestershire Sauce

1 Teaspoon Onion Powder

2 Teaspoon Garlic Powder

1/2 Tablespoon Tomato Paste

1 Teaspoon Cracked Pepper

1 Teaspoon Salt

2 Tablespoon Water


Directions

Cut and prepare the vegetables and set them to the side in a large bowl. Thinly slice most of the shallots but set some aside for garnish.



Thinly slice your meat of choice (I used steak), and roughly chop the bacon.


In another bowl, combine all of the sauce ingredients. Stir well until combined.


To prepare the garnish, slice the reserved shallots into 5 cm long strips and then slice them again into matchstick width. Place them in cold water, allowing them to curl up.


In a large pan, heat the olive oil.


Once the oil is heated, add the beef and cook until it begins to brown.


Add the bacon and cook for another approximately 2 minutes.


Add the butter, mixing it throughout the pan until fully melted.


Add the vegetables, stirring gently to combine.


Continue to allow it to cook until the vegetables begin to brown.


Add the sauce, tossing thoroughly until the sauce thickens and coats the vegetables and meat.


Add the garnish of sesame seeds and scallions.


Serve it on its own or enjoy with some bread, rice, or mashed potatoes, or even some pasta or noodles. I had mine with some rice. Enjoy!
